Warm Your Tummy With These Nutritious Vegan Soup Recipes

Since it is starting to get chilly this time of the year, it is great to cook some warm soup to make your coldest nights fun and bearable.

The Ultimate Vegetable Soup

The healthiest mix of vegetables can be found in this wonderful and delicious soup. Prepare the following ingredients:

  • Eight cups of vegetable broth
  • Two cups of onion
  • Two potatoes
  • Three Tomatoes
  • Two cups of cooked beans (garbanzo, cannellini or azuki beans)
  • One cup of green beans
  • One cucumber
  • One half cup of parsley
  • Two tablespoons of olive oil
  • One teaspoon of garlic powder
  • One teaspoon of salt

What you need to do:

Heat the pan. Saute the garlic and onions in the oil/ Add about a half teaspoon of salt. Add the potatoes and let it cook for five minutes. Add the beans, cucumber, parsley and vegetable broth. Wait for it to reach boiling point. Let it simmer for fifteen minutes.

Cream of Broccoli Soup

Broccoli is a great source of Vitamin C and dietary fibers. This vegetable will do you a lot of good, so it is ideal to load up on some.

Prepare the following ingredients:

  • Five cups of vegetable broth
  • Four cups of broccoli
  • One and a half cups of potato
  • Two big onions
  • One fourth raw macadamia
  • Two tablespoons of olive oil
  • Eight cloves of garlic
  • Salt
  • Pepper

What you need to do:

Peel and dice the potatoes. Mince the garlic and finely chop the onions. Heat the olive oil in a pot under moderate heat.  Saute the onion and garlic with salt for around three to five minutes. Add the potatoes and cook for about five to ten minutes. Add the broccoli and vegetable broth. Wait for it to boil. Lowe the heat and let it simmer for an estimate of twenty minutes until the vegetables are tender.

Turn off the heat and transfer the soup to a blender. Remove the center of the cap to let the steam out. Pour it in batches and add macadamia nuts. Blend until smooth for thirty seconds or so. You can use chives for garnish.

How to make a vegetable broth

Making your own vegetable broth is easy. Basically, you can use any vegetables. Here is one recipe you can use.

What you need:

  • A tablespoon of olive oil
  • One onion
  • Two pieces of carrots
  • One celery
  • One kale
  • Two cloves of garlic
  • Four black peppercorns
  • A teaspoon of salt
  • Eight cups of water

What to do:

Heat the pot and place some olive oil. Chop the vegetables. Place your chopped vegetables in one by one. This will normally take about twenty minutes. Then add the water. Cook for twenty minutes. Add some salt, soy sauce and pepper. Let it cook for another thirty minutes. Strain the vegetables.

This broth is great for a week If you place it on ice cubes and have it frozen, it will last for more than a month.
