Our Holiday 2014 Menu
Merry Christmas to all! Here’s to a great year and a lot of cooking in the kitchen.
Our Holiday menu is for two days and we’ve been cooking since the 22nd of December.
It starts with morcon. My grandma commissioned my mom on the 22nd to cook morcon – a type of meat roll (usually beef) slowly cooked in tomato and liver sauce until tender. Every cook and household has their own versions depending on the preferred ingredients that are stuffed inside the beef roll. This dish is a bit similar to pot roast and can be cooked over the stove or in the oven.
On Christmas Eve we had a pasta dish that’s easy, hearty, and Italian. Hey, it’s Christmas. Any dish with a round ingredient or component is believed to invite good luck especially during this season. So, we made large meatballs cooked in tomato sauce and then topped over penne cooked al dente. You can check the recipe here.
For dessert, no-bake blueberry cheesecake and gelatin and fruit salad from my aunt. Check here for our updated no-bake blueberry cheesecake recipe.
On Christmas Day we cooked roast chicken, sweet potato salad (with extra penne pasta), steamed rice, and asparagus soup.
Dessert is still our no-bake blueberry cheesecake just because we love it so much and we made extra which lasts ’til New Year.
